Equipment Needed:
- A large pot or saucepan
- A thermometer (preferably a food thermometer)
- A ladle or spoon
- Clean containers for storing the pasteurized milk
- Ice bath (optional, for rapid cooling)
Instructions:
1. **Prepare the Milk:**
- Start with fresh, raw milk. Ensure that your equipment is clean and sanitized to prevent any contamination.
2. **Heat the Milk:**
- Pour the raw milk into the large pot.
- Place the pot on the stove over medium heat.
3. **Monitor the Temperature:**
- Use the thermometer to monitor the milk's temperature.
- Heat the milk to at least **161°F (72°C)** and maintain this temperature for **15 seconds**. This is known as high-temperature short-time (HTST) pasteurization.
- Alternatively, for low-temperature long-time (LTLT) pasteurization, heat the milk to **145°F (63°C)** and hold it for **30 minutes**.
4. **Stir Occasionally:**
- Stir the milk gently while heating to ensure even distribution of heat and to prevent scorching at the bottom.
5. **Cool the Milk:**
- After the required time at the target temperature, remove the pot from the heat.
- Quickly cool the milk by placing the pot in an ice bath or transferring it to a clean, sanitized container and placing it in the refrigerator.
6. **Store the Milk:**
- Once cooled, store the pasteurized milk in clean, airtight containers in the refrigerator.
